Carol Curtis, a newly-purchased cazuela is ready to use. You don't need to 'cure' it. You can use it on the stovetop as well as in the oven. Use it to prepare any dish you like--try this one:

You mention the cazuela. I read other articles about how clay pots enhance the flavors and would like to buy one. If I find one at a weekly market, do I have to do anything special before and when using it? Can I use it on and in the oven? Any recipes you recommend for my first attempts?
